Manny’s Choice Cheesecake
The richest, creamiest, most decadent cheesecake. Top it with fresh berries & a sprig of mint for a beautiful & delicious creation.
Ingredients
- Crust
- 2 cups graham cracker crumbs
- 3 Tbsp sugar
- ½ tsp salt
- 6 Tbsp melted butter
- Filing
- 2 lbs cream cheese – room temp
- 1 ½ cups sugar
- 3 tsp pure vanilla
- 4 large eggs
- 3/4 cup sour cream
- 1 ¼ cup heavy whipping cream
- Sauce
- 12 oz fresh berries
- ¾ cup water
- ¾ cup sugar
- 2 ½ tsp pure vanilla
Instructions
- Crust
- Mix together, lightly press in bottom of Springform pan
- Bake 350 for 10 minutes
- Filing
- Whip cream cheese for 5 minutes
- Add sugar and whip for 5 more minutes
- Add and mix vanilla and 1 egg at a time
- Add and mix sour cream
- Add whipping cream – stir into mixture – do not use a mixer
- Springform Pan
- Cover exterior of pan with aluminum foil to keep water out
- Pour filing into pan
- Place in pan in a larger pan that allows you to fill the outer pan with water about 1 ½ -2” high on the sides (creating a water bath)
- Bake 325 for 90-100 minutes in a water bath
- Take out and let cool for 90 minutes
- Sauce
- Place in skillet, bring to a boil, simmer for 15minutes
- Let cool, top cheesecake with sauce when serving
