Senatore Cappelli is a piece of living history — a heritage durum wheat selected in 1915 by agronomist Nazareno Strampelli and named for Marchese Raffaele Cappelli. Nearly lost to modern high-yield grains, it's prized today for its deep flavor and character. Rustichella d'Abruzzo grows it organically (certified CCPB, IT BIO 009), mills it into semolina, and shapes it with bronze dies — an heirloom grain treated with heirloom methods.

I used this pasta to make macaroni and cheese for the family on Christmas Day and it tasted great! I am gluten intolerant to American pasta but had absolutely no problems with this Italian pasta. It was so nice to be able to eat the same pasta as the rest of the family. I am so glad to have found this company that sells real Italian pasta.

For the first time in over 12 years after a gluten allergy diagnosis, I was able to have real spaghetti noodles in a white clam sauce with French bread baked from Manny's flour!
