Manny’s Choice Garlic Gnocchi with Vegetables

Ingredients
  

  • 1 package Gnocchi di patate
  • 1 zucchini
  • 1/4 onion
  • 3 cloves garlic
  • 1/2 pint grape tomatoes
  • 1/4 cup fresh basil
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • 1/4 cup Parmesan cheese
  • Salt and pepper
  • Olive oil

Instructions
 

  • Prep vegetables: Before making the sauce, the vegetables need to be cut and set aside. Mince the onion and garlic. Next, half the zucchini and slice into ¼ inch pieces. Then roughly chop the basil and half the grape tomatoes.
  • Prepare the sauce: In a sauce pan over medium heat drizzle olive oil and add zucchini, onion, garlic, and salt and pepper. Cook until zucchini is tender and onion is translucent, for approximately 4 minutes. Next, add the tomatoes and cook for another 3 minutes, stirring often. The tomatoes should be soft.
  • Cook the Gnocchi: Boil the Gnocchi in salted water for two minutes. Then strain the gnocchi keeping a 1/4 cup of cooking water. Add the gnocchi and cooking water to the sauce pan with the vegetables. Mix thoroughly to create a sauce. Then, turn the pan to low heat and add in basil, cheese, butter and lemon juice. Toss together and add extra basil, and cheese to garnish.
