Manny’s Choice Mushroom Pasta with Goat Cheese

  • 5 ounces Timila Ziti Pasta
  • 4 cloves garlic
  • 2 tbsp butter
  • 1 cup white wine
  • 2/3 cup heavy whipping cream
  • 16 ounces cremini mushrooms
  • 1/4 cup parmesan cheese
  • 2 cups spinach
  • 5 ounces goat cheese
  • 1 tsp salt and pepper


  • Cook Pasta: Cook pasta as directed on the package.
  • Prepare the sauce: Cut the mushrooms into slices and mince the cloves of garlic. In a skillet add the mushrooms, garlic and butter. Stir and sauté until mushrooms are golden brown. Next add the white wine and let it simmer for 2-3 minutes. Then add the whipping cream, salt and pepper and stir to combine. Let sauce simmer for 5 minutes.
  • Toss the Pasta: When the pasta is ready, strain most of the water out leaving a splash of pasta water and then return the noodles and the splash of water back to the pot. While the noodles are hot, immediately add the mushroom sauce and stir in the spinach and goat cheese. The goat cheese will melt best if you cut it into smaller pieces beforehand. Lastly plate the pasta and top with parmesan cheese.
