Best Carrot Cake
Wonderfully moist & delicious.
Ingredients
- 1-2 cups Walnuts
- 1 1/2 cup Dark Brown Sugar
- 1/2 cup Granulated Sugar
- 1 cup Vegetable Oil or Melted Coconut Oil
- 4 Large Eggs
- 1 cup Unsweetened Applesauce
- 2 tsp Pure Vanilla Extract
- 3 cups Manny's Choice Flour
- 2 tbsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 4 tsp Ground Cinnamon
- 1 tsp Ground Ginger
- 1/4 tsp Ground Nutmeg
- 4 cups Grated Carrots
Instructions
- Combine brown sugar with grated carrots, mix together & let sit 1 hr
- Preheat oven to 350 degrees
- Grease 2 - 10 inch cake pans
- In a large bowl, beat eggs until light, gradually beat in white sugar, oil & vanilla
- Stir in applesauce
- Combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves & ginger in separate bowl & stir into wet mixture until absorbed
- Stir in the carrot mixture that's been sitting & walnuts
- Pour evenly into pans the 10 inch pans
- Cook 30-35 mins or until toothpick tests clean
