Ingredients
  

  • 1-2 cups Walnuts
  • 1 1/2 cup Dark Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 cup Vegetable Oil or Melted Coconut Oil
  • 4 Large Eggs
  • 1 cup Unsweetened Applesauce
  • 2 tsp Pure Vanilla Extract
  • 3 cups Manny's Choice Flour
  • 2 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 4 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1/4 tsp Ground Nutmeg
  • 4 cups Grated Carrots

Instructions
 

  • Combine brown sugar with grated carrots, mix together & let sit 1 hr
  • Preheat oven to 350 degrees
  • Grease 2 - 10 inch cake pans
  • In a large bowl, beat eggs until light, gradually beat in white sugar, oil & vanilla
  • Stir in applesauce
  • Combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves & ginger in separate bowl & stir into wet mixture until absorbed
  • Stir in the carrot mixture that's been sitting & walnuts
  • Pour evenly into pans the 10 inch pans
  • Cook 30-35 mins or until toothpick tests clean
