Manny’s Choice Strawberry Scones with Lemon Icing

Ingredients
Dough
- 2 cups of fresh strawberries
- 2 1/4 cups Manny’s Choice all-purpose flour
- 4 tbsps. sugar
- 6 tbsps. butter
- 1 large egg
- 1 tbsp baking powder
- 1/2 tbsp vanilla extract
- 2/3 cup milk
- 1/4 tsp salt
Lemon Icing
- 2 tbsp lemon juice
- 1 1/2 cups powdered sugar
Instructions
- Prep ingredients: Preheat oven to 400 °F. Next roughly chop strawberries into small pieces and set aside. Lastly, line a baking sheet with parchment paper.
- Make the dough: Add sugar, salt, flour, and baking powder to a large bowl and mix. Next cut your butter into cubes. The butter should be cold from the fridge. Add the butter to the bowl and using a pastry cutter, cut the butter into the dry ingredients. Then, mix until the dough mixture forms small pea sized pieces. Next, mix in the chopped strawberries. Finally, add your egg, milk and vanilla into the center of the bowl and use a spatula to mix the wet ingredients into the dry. Adding more flour might be necessary if your dough is too wet. Using your hands can help the dough form as well.
- Form the scones: Using a floured rolling pin and your hands, shape the dough into a 10-inch circle. Next, cut the dough into eight equal triangles. Then, transfer the triangles onto the baking sheet.
- Bake: Place the baking sheet into the preheated oven and bake for 20-25 minutes. The scones should smell delicious and be golden brown when ready.
- Make Icing: Add the lemon juice and powdered sugar into a small bowl. Whisk until combined and the sugar is melted. The icing will look glossy and smooth. After scones are done baking and cooled, drizzle the icing on top of each strawberry scone.
