Manny’s Choice Pesto Pasta Salad

Ingredients
  

  • 1/2 package of Organic Timilia Busiate
  • 1/3 cup cherry tomatoes
  • 1/2 cup spinach
  • 1/2 cup arugula
  • 1/3 cup kalamata olives
  • 4.5 ounce jar of pesto
  • 1/4 cup crumbled feta

Instructions
 

  • Prep vegetables: First slice the cherry tomatoes and kalamata olives in half and set aside. Next, measure out the spinach and arugula and add all the vegetables to a large bowl.
  • Cook the noodles: Boil water in a large pot. Once the water is boiling add your Organic Timilia Busiate and cook according to package directions. Then, once the pasta is done, add it to a strainer and rinse pasta under cold water until cool to the touch.
  • Mix the pasta salad: Add the cooled pasta to the bowl of vegetables and mix. After combined, add the jar of pesto and crumbled feta and continue mixing until pesto coats all the ingredients. Lastly, cover the bowl with plastic wrap and refrigerate for at least 2 hours before serving.
