Manny’s Choice Minestrone Soup
Ingredients
- 8 ounces of Organic Senatore Cappelli Orecchiette Pasta
- 1 jar of Pomodori Pelati Hand Peeled Tomatoes
- 1/2 onion
- 3 tbsps olive oil
- 1 large carrot
- 1 large celery stick
- 1 zucchini
- 1 quart vegetable broth
- 1 bay leaf
- 1 can navy beans
- 4 cloves garlic
- 2 tablespoons Italian seasoning
- Salt and pepper
- Parmesan cheese to garnish
Instructions
- Prep vegetables: First peel the carrot, onion, and garlic cloves. Dice the onion, carrot, zucchini, and celery into uniform pieces. Dice the hand peeled tomatoes and set tomatoes and tomato juice aside. Lastly, mince the garlic.
- Prepare the soup: In a large pot heat olive oil over medium heat. Add the carrot, onion, garlic, zucchini, celery and salt and pepper and cook for 5 minutes until vegetables are soft. Next add the tomatoes with juice, Italian seasoning, bay leaf, navy beans, and vegetable broth to the pot. Stir to combine and let simmer covered for 15 minutes.
- Add Pasta: Add Orecchiette Pasta to soup and turn to medium heat. Cook according to package instructions stirring occasionally. Add a cup or two of water if a thinner soup is wanted.
- Final Steps: Add more salt and pepper to taste. Take out the bay leaf, and serve in bowls. Lastly, top with parmesan cheese for an extra tasty garnish.
