Manny’s Choice English Muffins
Ingredients
- 5 cups Manny’s Choice Flour
- 3 tbsp honey
- 2 cups whole milk or milk of choice
- 1 ea egg
- 4 tbsp unsalted butter
- 1 1/2 tsp salt
- 1/8 cup cornmeal
- 1 tbsp olive oil
Instructions
- Make the yeast mixture: In a small pot add milk and honey, and cook over low heat until it reaches 110-115°F. Then remove the pot from the heat. Stir in the yeast, and let it sit for five minutes. In the meantime, melt the butter. Next, whisk in the egg and the melted butter to the yeast mixture and set aside.
- Form the dough: First, in a large bowl add in Manny’s Choice Flour and salt. Then, mix with a dough hook. While the mixer is on a low speed, slowly pour the yeast mixture into the bowl and continue mixing until everything is combined. Scrape the sides and bottom of the bowl as necessary. Next, turn the speed up to medium, and continue mixing for about 4 minutes until the dough is formed and pulled away from the edges of the bowl. The dough should feel a little sticky.
- Let the dough rise: In a slightly oiled bowl add the dough and brush the remaining oil on top of the dough. Next, cover the dough and leave it in a warm place to rise for an hour or until doubled in size. Then, punch the dough down and place it on a lightly floured counter. Then, knead the dough into a ball shape and divide it in half. Each half will make 8 equal pieces. Shape each of the pieces into a ball and then flatten. In total, you will have 16 pieces. Lastly, put the pieces onto a parchment-lined baking sheet that is dusted with cornmeal and dust more cornmeal on top. Cover with a towel and set aside for an hour. In each rising process the dough should double in size.
- Bake English Muffins: Preheat the oven to 325°F. Meanwhile, heat a pan or griddle over medium heat. Then place each dough piece carefully on the griddle and cook for approximately two minutes on each side. Continue this process until all pieces of dough are browned. Next, place the muffins on a cookie sheet and bake them for 10-15 minutes. The inside temperature should be 200°F. Lastly transfer the English muffins to a cooling rack to cool.
