Manny’s Choice Chocolate Chip Zucchini Muffins

Ingredients
- 2 3/4 cups Manny’s Choice Flour
- 2 eggs
- 1 1/3 cups sugar
- 3 cups grated zucchini
- 3/4 cup unsalted butter
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp cinnamon
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup dried cranberries
- 2 tsps vanilla extract
Instructions
- Prep the zucchini: Three medium sized zucchinis should make around 3 cups of shredded zucchini. First cut all the stems of the zucchinis off. Next, take a cheese grader and grate all the zucchini and set aside.
- Make the batter: In a large bowl combine Manny’s Choice Flour, baking soda, baking powder, salt, and cinnamon. In another bowl stir together eggs, vanilla extract, zucchini, and melted butter. Next, pour the wet ingredients into the dry ingredients and mix to combine. Lastly, gently fold in both the cranberries and chocolate chips.
- Bake in oven: Preheat the oven to 350 °F. Next get a muffin tin and butter the muffin tin thoroughly. Then, scoop the batter evenly and fill the muffin cups up to the surface of the tin. Bake on the middle rack for 20-30 minutes. Muffins should be golden brown and you can use a toothpick to test if the muffins are done in the middle. Let cool for 5-10 minutes before taking the muffins out.
