Manny’s Choice Cheddar Zucchini Muffins
Ingredients
- 2 1/2 cups Manny’s Choice Flour
- 4 tsps baking powder
- 2 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 3/4 cup grated cheddar cheese
- 1 cup grated zucchini
- 1/3 cup onion
- 3/4 cup milk
Instructions
- Prep vegetables: First, cut off the top and bottom of the zucchini. Next, using a cheese grater, grate the zucchini until there is one cup of grated zucchini. Next, finely dice half an onion. Set the vegetables aside.
- Make muffin batter: a. Dry Mixture: In a large bowl add Manny’s Choice Flour, baking powder, salt, pepper, and mix. Once mixed, slowly fold in the cheese and stir. b. Wet Mixture: In a separate bowl add the grated zucchini, milk, onion, eggs, and mix to combine. c. Lastly, combine the wet mixture to the dry mixture and mix thoroughly.
- Bake the muffins: Preheat oven to 430 °F. This recipe makes 6 large muffins. First, grease a muffin tin. Next, pour the muffin batter into the muffin cups about ¾ of the way full. Bake the muffins for 15-18 minutes. Finally, remove from oven and let cool for a few minutes. Best served warm!
