Manny’s Choice Blackberry Cobbler
Ingredients
Cobbler Batter
- 2 1/2 cup Manny’s Choice Flour
- 1 1/2 cup sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1/4 cup melted butter
- 2 tsp vanilla extract
- 2 cup milk
Berries
- 6 cup fresh blackberries
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- 1/4 cup melted, unsalted butter
- 1/2 cup white sugar
Instructions
- Prep the berries: In a large bowl add cornstarch and white sugar and stir together. Next add the blackberries, lemon juice and butter to the bowl and gently mix until blackberries are evenly coated. Set berries aside.
- Assemble cobbler batter: In a large bowl whisk together the Manny’s Choice Flour, baking powder, sugar, and salt. Next, stir in the melted butter and vanilla extract. Lastly, while stirring the batter consistently, slowly pour the milk in.
- Bake Cobbler: First, preheat the oven to 350 °F. Next, grease a 9×13 inch square baking dish with vegetable oil. Add the prepped blackberries to the bottom of the baking dish. Then, pour the cobbler batter over the blackberries. Bake for 50-60 minutes. The top should be golden brown and the inside soft. We recommend cooling the cobbler for 10 minutes and then serving alongside vanilla ice cream or whipped cream.
