  • 1 clove garlic, minced
  • 1 shallot , minced
  • 4 oz pancetta, diced
  • 1/4 cup white wine
  • 1 1/2 cup cream
  • 2 egg yolks , lightly beaten
  • 3 tablespoons sage, chopped fine
  • Salt and pepper, to taste
  • 1 package Manny Choice Gnocchi

Directions

  1. In a large skillet, add pancetta and cook over medium-high heat until almost crisp.

  2. Reduce heat to medium-low and add butter, garlic and shallots and saute until translucent.

  3. Add wine, stirring to deglaze the pan and cook until most of the liquid has evaporated.

  4. Stir in cream and bring to a boil. Reduce heat and simmer gently, stirring often until thickened.

  5. In a separate pot boil 4 quarts of water with salt. When boiling add 1 package of Manny’s Choice Gnocchi. Cook approximately 2 minutes or until the Gnocchi floats in the water. Strain.

  6. Remove cream sauce from heat and stir in cooked gnocchi. Add egg yolks, parmesan, salt and pepper, and toss to coat and heat through.
