Zucchini Lemon Cookies
This savory-sweet melding of flavors creates the most original-tasting cookie you've had. Glazed Lemon Zucchini Cookies are the perfect summer treat.
Ingredients
- 3/4 cup soft butter
- 3/4 cup sugar
- 1 pc egg-beat
- 1 cup grated drained zucchini
- 1 tbsp lemon
- 1 tbsp zest
- 1/4 tsp salt
- 1 tsp baking powder
- 2 cups flour
- 1 cup nuts
Instructions
- Cream butter & Sugar
- Add egg & lemon - mix
- Stir in dry items just till mixed
- Add zucchini & nuts
- Glazed while warm
- Powder & lemon juice
- Can add Zest - make thick
- Bake 375° 15-20 min then glaze
