Manny’s Choice Apple Oat Bars

Ingredients
Crust
- 1 cup Manny's Choice Flour
- 1 1/2 cups old-fashioned oats
- 1/2 cup of brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 stick butter
- pinch of salt
Apple Filling:
- 2 large apples
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsps white sugar
- 1 tbsp cornstarch
- 2 tbsps lemon juice
- 1 tsp vanilla extract
Instructions
- Make apple filling: First, core and then dice apples into small uniform cubes. Then into a sauce pan add apples, cinnamon, nutmeg, sugar, cornstarch, lemon juice, and vanilla. Mix thoroughly until all apple pieces are coated. Next, cook the filling over low heat stirring frequently for around 10 minutes. The apples should be soft and the filling should be thick.
- Make crust: To make the crust, first, melt the stick of butter. Next, in a medium sized bowl combine Manny’s Choice Flour, oats, brown sugar, cinnamon, vanilla, salt, and the melted butter. Use a spatula and stir to combine all ingredients.
- Bake the bars: Preheat the oven to 350 °F. Then, get an 8×8 baking dish and line it with parchment paper. Take around ¾ of the crust mixture and put it on the bottom of the pan, pressing down and using the spatula to make an even, smooth crust layer. Next, add your apple filling and spread the mixture evenly on top of the crust. Use the last ¼ of the crust mixture and sprinkle on top of the apple filling. Lastly, bake for forty minutes. Let bars completely cool before cutting into eight squares so they hold their shape.
