Manny’s Choice Italian Summer Pasta Salad
Ingredients
- 250 g Organic Senatore Cappelli Mezzemaniche half a bag
- 1 cup cucumbers
- ½ cup cherry tomatoes
- ½ cup bell pepper
- ½ cup sliced pepperoni
- ¼ cup sharp cheddar cheese
- ¼ cup mozzarella cheese
- ¾ cup Italian Dressing
- Salt and Pepper to taste
Instructions
- Prep Ingredients · Cut cucumber in half and slice into half-moon pieces· Half the cherry tomatoes· Dice bell peppers· Cube Cheddar and Mozzarella cheese· Combine all ingredients into a large mixing bowl
- Cook Pasta· Boil large pot of salted water· Cook Organic Senatore Cappelli Mezzemaniche according to package directions· Strain pasta and run cold water over pasta until cool
- Finish Pasta Salad· Toss cooked pasta with vegetables and cheese mixture· Mix in Italian dressing· Add salt and pepper to taste· Store covered in refrigerator until ready to serve
