Manny's Choice Italian Summer Pasta Salad

Ingredients

  • 250 g Organic Senatore Cappelli Mezzemaniche half a bag
  • 1 cup cucumbers
  • ½ cup cherry tomatoes
  • ½ cup bell pepper
  • ½ cup sliced pepperoni
  • ¼ cup sharp cheddar cheese
  • ¼ cup mozzarella cheese
  • ¾ cup Italian Dressing
  • Salt and Pepper to taste

Instructions

  • Prep Ingredients
    ·       Cut cucumber in half and slice into half-moon pieces
    ·       Half the cherry tomatoes
    ·       Dice bell peppers
    ·       Cube Cheddar and Mozzarella cheese
    ·       Combine all ingredients into a large mixing bowl
  • Cook Pasta
    ·       Boil large pot of salted water
    ·       Cook Organic Senatore Cappelli Mezzemaniche according to package directions
    ·       Strain pasta and run cold water over pasta until cool
  • Finish Pasta Salad
    ·       Toss cooked pasta with vegetables and cheese mixture
    ·       Mix in Italian dressing
    ·       Add salt and pepper to taste
    ·       Store covered in refrigerator until ready to serve
