Manny’s Choice Creamy Turkey Pasta

Ingredients
  

  • 300 g PrimoGrano Spaghettoni
  • 2 tablespoons olive oil
  • 1 onion
  • 1 cup of mushrooms
  • 3 cloves garlic
  • 2 cups of cooked turkey
  • ½ cup of spinach
  • 1 ¼ cups of heavy cream
  • ¼ cup parmesan
  • Salt and pepper to taste

Instructions
 

  • Prep vegetables and turkey: First, thinly slice the mushrooms. Roughly chop the spinach, and set aside. Next, mince the garlic and onions and set aside. Lastly, take the cooked turkey and slice into medium sized pieces.
  • Boil pasta and cook vegetables and turkey: First, in a large pot of water boil the PrimoGrano Spaghettoni according to package directions. Then, in a large saucepan add olive oil, garlic, and onions. Sauté on medium heat for 3 minutes, or until onions have softened. Next, add the mushrooms and stir for another 3 minutes. After the vegetables are cooked, add the turkey and spinach. Cook until turkey is lightly browned.
  • Make the sauce: First strain the pasta. Save 3 tablespoons of cooking water and set aside. Next, in the same saucepan as the vegetables and turkey, add the heavy cream on low heat and stir. Then slowly stir in the parmesan cheese until sauce is smooth. Add salt and pepper to taste. Finally, add the pasta, pasta water, and stir to combine.
