Manny’s Choice Strawberry Cake
Ingredients
- 1 1/4 cup Manny's Choice Flour
- 1 3/4 tsp Baking Powder
- 1/2 tsp Salt
- 6 tbsp Unsalted Butter
- 1 cup Sugar
- 1 Zest of 1 lemon
- 1/2 tsp Nutmeg
- 2 each Eggs
- 1/2 cup Sour Cream
- 1 tsp Vanilla
- 2 cups Strawberries
- 3 tbsp Sugar (for strawberries)
Instructions
- Prep strawberries: First, remove the strawberry stems, and slice the strawberries 1/4 inch thick. Next, in a bowl, add the sliced strawberries, sugar and a pinch of salt and gently mix to combine. Set strawberries aside.
- Make cake batter: In a large bowl add Manny’s Choice Flour, baking powder, salt and mix. Set flour mixture aside. Then, use an electric mixer and a large bowl to mix the butter, sugar, lemon zest, and nutmeg until thoroughly combined. Next, add the eggs, sour cream, and vanilla. Beat until all mixed, scraping the sides of the bowl with a spatula as needed. Lastly, add the Manny’s Choice Flour mixture to the wet mixture and mix until the cake batter is smooth.
- Bake the cake: Preheat oven to 350 °F. In a 9-inch round pan, pour the cake batter in and smooth the batter down until evenly flat using a spatula. Then, place the sliced strawberries carefully on the cake in a single layer. Next, bake the cake for 40-50 minutes until the top is golden brown and the center is cooked through. Lastly, let the cake cool before eating and serve with whipped cream.
