This savory-sweet melding of flavors creates the most original-tasting cookie you've had. Glazed Lemon Zucchini Cookies are the perfect summer treat.

Ingredients
  

  • 3/4 cup soft butter
  • 3/4 cup sugar
  • 1 pc egg-beat
  • 1 cup grated drained zucchini
  • 1 tbsp lemon
  • 1 tbsp zest
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 2 cups flour
  • 1 cup nuts

Instructions
 

  • Cream butter & Sugar
  • Add egg & lemon - mix
  • Stir in dry items just till mixed
  • Add zucchini & nuts
  • Glazed while warm
  • Powder & lemon juice
  • Can add Zest - make thick
  • Bake 375° 15-20 min then glaze
