
Manny’s Choice Lasagna Soup

Ingredients
- 6.5 oz Farro Pizzichi
- 1 lb ground Beef
- 1 onion
- 5 cloves garlic
- 5 cups chicken broth
- 2 tbsps. Italian Seasoning
- 2 cups Mozzarella cheese
- 1 can diced tomatoes
- 1 can crushed tomatoes
- 2 tbsps. chopped parsley
- Salt and pepper to taste
Instructions
- Prep Ingredients· Brown the ground beef in a large pot over medium heat· Season with salt and pepper· Dice the onion and garlic · Over medium heat, add garlic and onion to the meat and sauté for three minutes
- Make Soup Broth· In the soup pot add the chicken broth, both cans of tomatoes, and Italian seasoning · Stir to combine all the ingredients· Bring to a boil then cover and simmer for 25 minutes.
- Finish Soup· In a separate pot cook Farro Pizzichi according to package instructions· When both soup and pasta is done, stir in the cooked pasta into the soup· Transfer the soup into bowls and top with mozzarella cheese and parsley
