Sourdough Starter

Equipment

  • 1 Qt canning jar or other glass jar
  • Coffee filter, paper towel, or thin material to cover jar
  • Elastic band to secure cover
  • Wooden or plastic spoon

Ingredients
  

  • 1/4 cup Manny’s Choice Flour, 1/8 cup Manny’s ChoiceFlour
  • 1/4 cup water at room temp (filtered or spring waterpreferred)
  • 1 packet 1 packet Manny’s Choice Camaldoli Sourdough Starter Culture

Instructions
 

Activating your starter culture:

  • 1) Add water into jar. Sprinkle Manny’s Choice Starter Culture over water, and allow to sit for a few minutes to soften. Stir until well mixed. Add ¼ cup Manny’s Choice Flour, mix well (stirring vigorously will incorporate bubbles into the mixture, which helps with activation – this is good). Cover the jar & secure with elastic band around the rim.
  • 2) Allow thestarter to bloom/grow at room temperature (68 to 78° F is ideal) for 24 hours,in a draft-free area, and out of direct sunlight. Stir one or two times duringthe first 24 hours will help the starter to grow.
  • 3) After 24 hours, “feed” your starter with 1/8 cup of Manny’s Choice Flour and 1/8 cup of water (a thick pancake batterlike consistency). Stir well to incorporate. Allow the starter to bloom/grow. This could take 2-5 days depending on temperature of environment and other things. Continue to feed twice daily with 1/8 cup flour & 1/8 cup water until tiny bubbles appear on the surface. This means your starter is “waking up”. You may begin to see some activity within another day or 2, but it can take several days depending on temperature. When it’s full of bubbles, you’re ready for action and the starter is considered Activated!
  • 4) Once your starter is Activated, continue with once or twice daily feedings of roughly equal parts flour & water – approximately ¼ cup each.
