Manny’s Choice Lasagna Soup

Ingredients
  

  • 6.5 oz Farro Pizzichi
  • 1 lb ground Beef
  • 1 onion
  • 5 cloves garlic
  • 5 cups chicken broth
  • 2 tbsps. Italian Seasoning
  • 2 cups Mozzarella cheese
  • 1 can diced tomatoes
  • 1 can crushed tomatoes
  • 2 tbsps. chopped parsley
  • Salt and pepper to taste

Instructions
 

  • Prep Ingredients
    ·      Brown the ground beef in a large pot over medium heat
    ·      Season with salt and pepper
    ·      Dice the onion and garlic
    ·      Over medium heat, add garlic and onion to the meat and sauté for three minutes
  • Make Soup Broth
    ·      In the soup pot add the chicken broth, both cans of tomatoes, and Italian seasoning
    ·      Stir to combine all the ingredients
    ·      Bring to a boil then cover and simmer for 25 minutes.
  • Finish Soup
    ·      In a separate pot cook Farro Pizzichi according to package instructions
    ·      When both soup and pasta is done, stir in the cooked pasta into the soup
    ·      Transfer the soup into bowls and top with mozzarella cheese and parsley
