Poached Egg & Avocado Toast with Caramelized Onions

This simple and healthy breakfast option is quick enough to make on a busy weekday morning or  is equally delicious enjoyed during a leisurely weekend brunch.

  • 1 tbsp Partanna Extra Virgin Olive Oil
  • 1/2 medium yellow onion
  • 2 slices thick Italian bread, toasted
  • 2 large eggs
  • 1 tbsp white vinegar
  • 1 small avocado, sliced
  • kosher salt and black pepper
  • 1 dash cayenne pepper (optional)


  1. Sauté onions in a little olive oil and cook slowly until very soft. 

  2. In a pan, bring water to a boil and add white vinegar. Poach eggs 8 minutes.

  3. Toast the bread.

  4. On each slice of bread, add a spoonful of caramelized onions, sliced avocado and top with a poached egg. Add salt and pepper to taste along with a sprinkle of cayenne pepper.
