Manny's Choice Lemon Cookies

Equipment

Ingredients

  • 2 1/4 cups Manny's Choice Flour
  • 1 cup softened butter
  • 1 1/2 cups sugar
  • 1 egg
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla extract
  • 4 tbsps. lemon zest
  • 2 tbsps. lemon juice

Instructions

  • Make Cookie Dough
    ·       In a large mixing bowl add the butter and sugar.
    ·       Using a hand or stand mixer cream together the butter and sugar until fluffy.
    ·       Add egg and continue mixing for one minute
    ·       Then add flour, baking powder, salt, vanilla, lemon zest, and lemon juice.
    ·       Stir thoroughly to combine.
  • Bake Cookies
    ·       Preheat oven to 350º F.
    ·       Line a baking sheet with parchment paper
    ·       Scoop cookie dough into one-inch balls and place on the cookie sheet two inches apart
    ·       Bake for 10 to 13 minutes.
    ·       Take out of the oven when done baking
    ·       While still warm, top each cookie with a sprinkling of lemon zest
