Manny's Choice Creamy Tomato Spinach Pasta

- 250 g Farro Penne Rigate
- 1/2 Yellow Onion
- 2 Cloves of Garlic
- 1 Tbsp. Olive Oil
- 1 Can Diced Tomatoes
- 1/2 Tbsp. Italian Seasoning
- 2 Oz Cream Cheese
- 4 Oz Spinach
- 1/4 Cup Parmesan Cheese
- 2 Tbsps. Tomato Paste
- Salt and Pepper to Taste
Cook the Pasta· Bring a large pot of salted water to a boil· Add the Farro Penne and cook according to package instructions· Strain the pasta when done Make the Sauce· In a saucepan add minced onion, garlic and olive oil· Sauté over medium heat until onions are translucent· Add the Italian seasoning, diced tomatoes, tomato paste, and a half cup of water and stir to combine and continue cooking on medium heat for 3-4 minutes· Add salt and pepper to taste · Cut the cream cheese into four pieces · Turn the sauce to low heat and add cream cheese and mix thoroughly until melted Finish Pasta· Add the parmesan and spinach to the sauce and stir until spinach is wilted· Add the cooked Farro Penne Pasta and stir until the pasta is covered with the sauce· Serve and top with more parmesan cheese Enjoy!
