Description
Senatore Cappelli is a durum wheat variety, selected in 1915 by agronomist Nazareno Strampelli. This authentic Italian grain was dedicated to Marchese Raffaele Cappelli from Abruzzo, Senator of the Italian Kingdom and promoter of the 20th century Agrarian Reform.
This autumnal variety is well suited for organic farming due to its considerable height, which can reach above 1.5 meters (4 feet). This 100% Italian-grown Senatore Cappelli variety has unique and distinctive brownish-black awns with large glassy grains. After milling, the resulting semolina has a bright amber-yellow color. The pasta has a subtle sweet, malty flavor and pleasing supple texture.
From the Italian word spago meaning “string or thread,” there is no pasta in the world more famous than Spaghetti. We strongly recommend you serve this Senatore Cappelli Spaghetti with olive oil-based sauces or simple tomato sauce so you may enjoy its flavor and texture.

This spaghetti is simply delicious. The flavor is delicate and almost creamy (if that makes sense). I served it with clam/olive oil/garlic/lemon. A super simple dish that allowed the pasta to shine. And it sure did. I generally have a problem with gluten in pasta aggravating my arthritis but not with this pasta! I will definitely purchase this again.

I was really nervous to try this pasta, I get sick from gluten-free pizza being made in a non-GF oven. This spaghetti was truly delicious, I could really taste the pasta with the sauce I had cooked it with. I kept waiting for there to be a problem but it never came! I didn’t have ANY problems, where as with American gluten I have the worst symptoms that last for up to a week. HIGHLY recommend this pasta!

Here’s our story…Our oldest child developed extreme sensitivity (gut issues) over time after eating anything gluten, so we had to buy gluten free products only. After hearing stories from various friends experiencing no problems at all when eating gluten products in Europe, it became apparent American wheat may be the issue. We all but gave up until encouraged to try this product that is 100% sourced and made in Italy. NO PROBLEMS EXPERIENCED AT ALL!!! We are fans forever, THANK YOU MANNY’S CHOICE!
