The taste is wonderful and worth it just for that. But an incredible benefit for me is that after over 20 years of arthritis pain in my knuckles and over 30 years of being on meds for esophageal reflux, I’ve been free of the arthritis pain and off the heartburn meds for over two months now. I am just flabbergasted at the high quality of this flour. I mean that in a good way. I made a basic Italian bread and it taste like, a million bucks. It was silky and light and as another reviewer said, it didn’t make me feel bloated after I ate it. I also purchased the yeast. I can’t go back to store bought flour anymore. This is just AWESOME flour. And trust me I am hard to please.

I have gone from never having baked bread to bringing flour with me when we travel so that I can bake bread for friends and relatives. My gluten-intolerant brother is CRAZY about this bread as he can eat it with absolutely no discomfort. But trust me — everyone else loves it. Oh, I also use the Italian Yeast from Manny’s. I use 1/3 as much as standard American yeast. One can of this yeast will make 92 loaves using my recipe! Wow!
