This is a fabulously hearty bread with unbelievable flavor and texture. Add extra sharp cheese, rosemary, garlic or your favorite ingredient for a little extra flavor. Enjoy!
- 3 cups Manny’s Choice Organic Flour
- 2 1/4 tsp salt
- 1 packet rapid rise years
- 1 1/2 cups water
5 quart or larger enamel cast iron pot with a lid
In a large mixing bowl whisk flour, salt and packet of rapid rise yeast. Add 1 ½ cups warm water and mix with spatula. The dough will be soft and a bit lumpy. Cover the bowl with plastic wrap and let set for 12-18 hours on the counter top until approximately double in bulk. Do not refrigerate.
Preheat oven to 450°. When heated place cast iron pot with the lid in the oven. Preheat the pot for 30 minutes.
Place the dough out onto a heavily floured surface and shape in to a ball. Cover with plastic wrap and allow the dough to rest for 30 minutes.
Remove hot pot from the oven. Flour or oil your hands and carefully pick up the ball of dough and drop it into the hot pot. Replace the lid and return the pot to the oven. Bake for 30 minutes. Next remove the lid from the pot and continue baking for another 15 minutes. Remove pot from oven and then remove bread from the pot. Let bread rest on a rack until cooled. Enjoy!
Hint: Add cheese, bacon bits or herbs for extra flavor.
